Vegetarian Lasagna Recipe
Lasagna noodles />
14 1 / 2 can of tomatoes
15 oz Tomato Sauce
1 cup chopped celery
1 cup chopped onion
1 cup Grn / red pepper
1 1 / 2 teaspoon crushed dried basil * />
Garlic clove minnced />
Beaten egg
2 cups Ricotta or Lo-Fat Cottage Ch
1 / 4 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
* Or substitute 1 / 2 t dried oregano 1 / 2 t of the Cook noodles dried basil and broccoli separately according to the package instructions, drain well. Set aside.
For sauce, cut the canned tomatoes. In a large saucepan combine undrained tomatoes, tomato sauce, celery, red pepper, green or sweet basil, bay leaves and garlic. Bring to boil, reduce heat. Simmer, uncover, 20-25 minutes or until sauce is thickened, stirring occasionally.
Remove bay leaves.
Meanwhile, in a bowl, mix eggs, ricotta cheese, Parmesan cheese and 1 / 4 t pepper.Stir in broccoli. Spread about 1 / 2 cup of the sauce into a 13x9x2 ?,? baking dish. Cover with half the noodles, half the broccoli mixture and half the remaining sauce.
Repeat layers, ending with the sauce.Bake, uncovered, at 350 degrees for 25 minutes, sprinkle with Mozzarella.Bake 5 minutes or until hot. Let stand 10 minutes before serving.
